Christmas candy time! |
It's no secret I love pecans. Preferably Texas ones. I will, however, keep it a secret how much of a batch of this I can consume before anyone else has a chance to try it...
Easy, easy, easy (also dangerous). We're talking 10 minutes start to finish. Adapted from this recipe for microwave peanut brittle, which I also recommend. As an added bonus, my version made the house smell like sugar and maple all afternoon.
What's your favorite Christmas treat?
Ingredients
1/2 c. light corn syrup
1 c. granulated white sugar
1 (heaping) cup roughly chopped pecans
1 tsp. imitation maple flavoring
1 tsp. butter
1 tsp. baking soda
Butter a large baking sheet. Combine corn syrup and sugar; microwave on high for 4 minutes. Add pecans; stir, and microwave for another 3 1/2 minutes on high. Add butter and maple flavoring, microwave for 1 1/2 minutes. Quickly stir in baking soda. Mixture will become foamy. Pour onto buttered baking sheet -- Do not pour into just one spot. Pour as to spread, keeping the mixture continuous. Instead of spreading with a spatula, shake and tilt the pan to get the mixture to spread a little. Cool completely. Break into pieces and store in an airtight container. If you don't eat it all, first.
Thank you, I was looking for one more thing to go in our homemade gifts. This is perfect.
